We use Hampshire trout caught in the crystal clear chalk stream waters of Hampshire’s nutrient-rich rivers to make our smoked fillets. We prepare and pin bone the side of trout, then cure the trout with our unique brine ready for hot smoking using an aromatic mix of apple, oak and a little hickory.

This is then flaked for your convenience.
